After de-stalking follows cold maceration at a temperature below 7°C for less than 12 hours. Then, the must is separated and the fermentation process starts with at a temperature below 15 °C. This wine is made following traditional procedures which brings up the wide range of the characteristic aromas and tastes of the Sauvignon Blanc variety.

Alcohol content: 13 Vol. %.
Acidity: 5,5 g/l
Ph: 3,1
Volatile acidity: 0,2 g/l
Total SO2: 80 mg/l
Residual sugar: 2 g/l

TASTING NOTES:

It presents a pale and clear yellow color. It is full of very pleasant, fruity and floral aromas in nose with a light mineral touch. It is mild, elegant, tasty and well structured in mouth. It has a characteristic fresh and persistent aftertaste.

MARRIAGE:

Perfect with pasta, white fishes and seafood.
