Manual harvest from September to the end of October. Grapes have been picked up at the prefect ripening.
Wine making:
– Cold maturation for 7 days aprox.
– Fermentation 28 ºC for 7 days separately
– Post maturation ( depending of the grape)
– Malolactic in barrel
– Barrel ageing for 11 months, French barrels.
– Blending
– Bottling

The wine is open to a lot of plates as Mediterranean food and also goes well with red meat and grilled fish. Lamb chops grilled with garlic and olives. Baked meatballs. Manchego cheese.

This blended wine shows the style of our winery:
Balanced, wood behind the fruit and complexity. Violets, black berry fruit, Black pepper and chocolates with a very elegant mouth and integrated acidity. A wine for the next 10 years.
